Nutrition is only one of many factors that influence people’s food choices. People ascertain foods for many other various reasons. One reason, of course, is their preference for certain tastes. Some tastes are widely liked, such as the sweetness of sugar and the zest of salt. Sometimes habit dictates people’s food choices while others select food by association such as happiness or disliked experiences. Ethnic heritage, tradition, people’s values, environmental ethics, religious beliefs, and political views also influence food choices. Social interaction is another powerful influence on people’s food choices or people may simply eat in response to emotional stimuli—for example, to relieve boredom or depression or to calm anxiety. Yes the list of why people choose food choices goes on (availability, convenience, economy, age, medical conditions, etc.).

- Discuss how incorporating a healthful menu will affect profitability. Consider all angles, from high-end entrées that use organic ingredients to reduced portion sizes of existing menu items.
